Description
This unit describes the skills and knowledge required to re-pack carton meat products after the carton is damaged. It includes technical skills that relate to re-packing the cartons, and administrative skills that relate to completing the records associated with the re-pack operation.This unit applies to individuals who work under general supervision in a meat processing premises.All work must be carried out to comply with workplace procedures, according to state/territory health and safety and food safety regulations, legislation and standards that apply to the workplace.Mandatory workplace requirements apply to the assessment of this unit.No licensing, legislative or certification requirements apply to this unit at the time of publication.

Elements and Performance Criteria
1. Prepare for re-packing
  • 1.1 Identify cartons with defects that require re-packing
  • 1.2 Identify workplace health and safety requirements for task, including personal protective equipment
  • 1.3 Identify food safety hazards associated with packing meat, and control the associated risks using preventative measures
  • 1.4 Check packing area for hygiene and operational requirements prior to commencing work
  • 1.5 Prepare equipment and consumables for packing and labelling
2. Re-pack cartons
  • 2.1 Re-pack cartons following workplace requirements
  • 2.2 Follow safe manual handling techniques
  • 2.3 Work to avoid contamination and cross-contamination
3. Complete re-pack documentation
  • 3.1 Generate new labels for re-packed products
  • 3.2 Check weight of product for label
  • 3.3 Complete re-pack documentation following workplace and regulatory requirements
  • 3.4 Maintain stocks of consumables
