Description
This unit describes the skills and knowledge required to shave a small stock carcase.This unit applies to those who work under general supervision in meat processing premises to shave scalded carcases such as pigs or goats.All work must be carried out to comply with workplace procedures, according to state/territory health and safety and food safety regulations, legislation and standards that apply to the workplace.Mandatory workplace requirements apply to the assessment of this unit.No licensing, legislative or certification requirements apply to this unit at the time of publication.

Elements and Performance Criteria
1. Prepare for work
- 1.1 Identify work instruction and quality assurance requirements for shaving, and clarify where required
- 1.2 Identify workplace health and safety requirements for task, including personal protective equipment
- 1.3 Identify hygiene and sanitation requirements for shaving
- 1.4 Identify sources of contamination and cross-contamination, and how these are managed
- 1.5 Prepare knife for shaving
- 1.6 Monitor carcases leaving the de-hairing process to ensure de-hairing meets workplace requirements and defects are identified
2. Remove carcase hair
- 2.1 Shave scalded carcases following work instructions, workplace health and safety requirements and hygiene and sanitation requirements
- 2.2 Monitor own work to ensure the effective removal of hair from carcase
- 2.3 Report issues that cannot be rectified to supervisor
