This unit describes the skills and knowledge required to assess dentition of an animal or carcase and record the results.This unit applies to individuals who work under general supervision in a meat processing premises.All work must be carried out to comply with workplace procedures, according to state/territory health and safety and food safety regulations, legislation and standards that apply to the workplace.Mandatory workplace requirements apply to the assessment of this unit.No licensing, legislative or certification requirements apply to this unit at the time of publication.

Elements and Performance Criteria
1. Prepare for work
  • 1.1 Identify work instruction for assessing dentition
  • 1.2 Identify workplace health and safety requirements for task, including personal protective equipment
  • 1.3 Identify possible sources of contamination and cross-contamination for task
2. Expose teeth
  • 2.1 Assess teeth to workplace and workplace health and safety requirements
  • 2.2 Expose all incisor teeth
  • 2.3 Differentiate permanent incisors from milk teeth
  • 2.4 Count the number of permanent incisors following workplace requirements
3. Record the dentition
  • 3.1 Identify the number of permanent incisor teeth
  • 3.2 Record dentition or mark carcase following workplace requirements
