Description
This unit describes the skills and knowledge required to recover offal on a slaughter floor, where a wide range of offal such as uterus, rectums, thymus gland, heart, kidneys, livers, testicles and pizzles can be recovered.This unit applies to individuals who work under general supervision to recover offal in a meat processing premises.All work must be carried out to comply with workplace procedures, according to state/territory health and safety and food safety regulations, legislation and standards that apply to the workplace.Mandatory workplace requirements apply to the assessment of this unit.No licensing, legislative or certification requirements apply to this unit at the time of publication.

Elements and Performance Criteria
1. Prepare for work
  • 1.1 Identify work instruction for recovering offal
  • 1.2 Identify workplace health and safety requirements for task, including personal protective equipment
  • 1.3 Identify types and sources of contamination to offal
  • 1.4 Identify inspection condemnation and pet food marks, and follow work instructions
  • 1.5 Identify hygiene and sanitation and quality assurance (QA) requirements for processing
2. Recover offal
  • 2.1 Recover offal and maintain correlation with carcase until postmortem inspection, following workplace requirements
  • 2.2 Inspect offal for contamination or defects, and trim after postmortem inspection
  • 2.3 Place recovered offal and trim in the appropriate bins or chutes following workplace requirements
