Description
This unit describes the skills and knowledge required to wash a carcase manually or by using a wash cabinet to remove blood, bone and/or dust from a carcase. (Any other extraneous matter, including faeces, would be trimmed.)This unit applies to individuals who work under general supervision in a meat processing premises.All work must be carried out to comply with workplace procedures, according to state/territory health and safety and food safety regulations, legislation and standards that apply to the workplace.Mandatory workplace requirements apply to the assessment of this unit.No licensing, legislative or certification requirements apply to this unit at the time of publication.

1. Prepare for work
  • 1.1 Identify work instruction for washing carcases
  • 1.2 Identify equipment required for washing carcases, and check it is in working order
  • 1.3 Identify workplace health and safety requirements for task, including personal protective equipment
  • 1.4 Identify types of contamination that should be washed
2. Clean carcase
  • 2.1 Wash carcase using minimal water, following workplace requirements, including workplace health and safety requirements
  • 2.2 Wash carcase to remove blood, bone dust, or any other extraneous matter from a carcase
  • 2.3 Wash carcase without causing contamination
