Description
This unit describes the skills and knowledge required to seal or drain the urinary tract of a small stock carcase during the dressing procedure. This process is used to drain a urinary tract using a probe and vacuum pump, or seal a pizzle using clips or a mechanical device. The mechanical device is usually a set of heated tongs or cutters.This unit applies to those who work under general supervision in meat processing premises.All work must be carried out to comply with workplace procedures, according to state/territory health and safety and food safety regulations, legislation and standards that apply to the workplace.Mandatory workplace requirements apply to the assessment of this unit.No licensing, legislative or certification requirements apply to this unit at the time of publication.

Elements and Performance Criteria
1. Prepare for work
  • 1.1 Identify work instruction for sealing and/or draining the urinary tract, and clarify where required
  • 1.2 Identify workplace health and safety requirements for task, including personal protective equipment
  • 1.3 Identify workplace tagging system for urine contamination identification, where used
  • 1.4 Identify hygiene and sanitation requirements for working in and around the evisceration area
  • 1.5 Identify sources of contamination and cross-contamination and how these are managed
  • 1.6 Prepare equipment and consumables for task
2. Process urinary tract
  • 2.1 Drain or seal urinary tract following work instructions, workplace health and safety requirements and hygiene and sanitation requirements
  • 2.2 Undertake start-up procedures for equipment
  • 2.3 Monitor operation of equipment to ensure effective operation
  • 2.4 Carry out maintenance procedures on equipment following workplace requirements
